I am looking for a book about a tracker who is called on by the military to find a creature.?

Fictional book written between 1998-2005. The CIA/Militrary has a lab. They inject a soldier with something and it transforms him into a superhuman creature who kills everyone. This"tracker" (who just located a lost child in either the mountains or the dessert) is called in to help a Special Forces team track and kill this creature. This creature is hard to kill because the more he eats, the faster he regenerates. At one point in the story the SF team shoot this creature with 50 cal rifles and it seems to slow the creature down. There is also a women in the story (I think she is part of the SF team). I am not sure of her name. The story moves to a few locations, but the monster is hunted in possibly the South Pole, the jungle, or a dessert.
